2 large chicken breasts

1 cup panko bread crumbs

1 cup all-purpose flour

2 large eggs, beaten

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

4 large whole wheat tortillas

1 ripe avocado, sliced

1 cup mixed greens (spinach, arugula, or your choice)

½ cup cherry tomatoes, halved

¼ cup red onion, thinly sliced

½ cup Greek yogurt or sour cream

Juice of 1 lime

Instructions
 

Prepare the Chicken:

    - Preheat your oven to 400°F (200°C).

      - Using a meat mallet or rolling pin, gently pound the chicken breasts to an even thickness of about ½-inch for consistent cooking.

        - Season both sides of the chicken with salt, pepper, garlic powder, and smoked paprika, ensuring an even distribution of spices.

          Coat the Chicken:

            - Set up a three-part breading station: Place the flour in a shallow dish, pour the beaten eggs into a second dish, and spread the panko bread crumbs in a third dish.

              - Dip each chicken breast first into the flour, shaking off any excess. Then, immerse it into the beaten eggs, allowing the excess to drip off. Finally, coat the chicken generously with panko breadcrumbs, pressing down lightly to help them stick.

                Bake the Chicken:
