1 lb (450g) chicken breast, cut into bite-sized pieces

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

1 cup all-purpose flour

1 cup panko breadcrumbs

Vegetable oil, for frying

For the Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (adjust according to desired spice level)

1 teaspoon fresh lime juice

Salt to taste

Chopped green onions for garnish

Add the chicken pieces, making sure each piece is fully coated. Cover the bowl with plastic wrap and refrigerate to marinate for at least 1 hour, or up to overnight for maximum flavor infusion.

    Prepare the Breading Station: Organize your breading station with three separate bowls:

      - First bowl: combine the all-purpose flour with a pinch of salt and black pepper.

        - Second bowl: pour in the leftover buttermilk mixture from the marinated chicken.

          - Third bowl: fill with panko breadcrumbs.

            Bread the Chicken: Retrieve the marinated chicken from the refrigerator. Working with one piece at a time, first dredge the chicken in the flour mixture, ensuring it is fully coated. Then dip it back into the buttermilk and finally coat it with panko breadcrumbs, pressing down slightly to ensure the breadcrumbs adhere well.
