4 slices of hearty sourdough bread

4 slices of sharp cheddar cheese

4 slices of crispy bacon

2 large eggs

2 tablespoons unsalted butter, divided

Salt and freshly ground pepper, to taste

Optional: Hot sauce, or sautéed spinach for a vibrant topping

Cook the Bacon: In a large skillet over medium heat, lay out the bacon strips in a single layer. Cook them until they reach a crispy texture, about 5-7 minutes, flipping halfway through for even crispiness. Once done, remove the bacon from the skillet and let it drain on a plate lined with paper towels. Reserve about 1 tablespoon of bacon grease in the skillet for added flavor.

    Fry the Eggs: With the reserved bacon grease still in the skillet, crack the eggs carefully into the hot grease. Cook them to your desired doneness: sunny-side-up for runny yolks or over-easy for a slightly firmer yolk. Season the eggs with a pinch of salt and freshly cracked pepper. Once cooked, gently set them aside on a plate.

      Assemble the Sandwich: Take two slices of the sourdough bread. Place one slice, buttered side down, in the skillet over medium heat. Layer on two slices of cheddar cheese, followed by two crispy bacon pieces, and finish with one of the fried eggs. Place the remaining two slices of cheddar cheese on top, and cap it with the second slice of bread, buttered side up.

        Grill the Sandwich: Spread 1 tablespoon of butter on the top slice of the sandwich. Cook until the bottom slice is a golden brown, about 3-4 minutes. Carefully flip the sandwich using a spatula, adding the remaining tablespoon of butter to the uncooked side. Grill until both sides are golden brown and the cheese is perfectly melted, approximately another 3-4 minutes.

          Slice and Serve: Once grilled, remove the sandwich from the skillet and let it rest for a minute to help the cheese set slightly. Slice the sandwich in half for easy handling. For an extra kick, drizzle with hot sauce or add a generous layer of sautéed spinach.
