1 lb ground beef (or substitute with ground turkey for a lighter alternative)

1 small onion, finely chopped

2 cloves garlic, minced

1 tsp chili powder

1 tsp ground cumin

1/2 tsp paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1/2 cup black beans, rinsed and drained

1/2 cup corn (frozen or canned)

8 small flour tortillas

Olive oil spray

Fresh cilantro, for garnish (optional)

Sour cream and salsa, for serving

Instructions
 

Prepare the Filling: In a large skillet, heat a splash of oil over medium heat. Add the finely chopped onion and sauté until it becomes translucent, about 3 minutes. Mix in the minced garlic and cook for an additional minute until aromatic.

    Cook the Meat: Add the ground beef or turkey to the skillet. Use a spatula to break it up, cooking until it is fully browned, approximately 5-7 minutes. If there’s excess fat, drain it off carefully.

      Season the Mixture: Sprinkle in the chili powder, cumin, paprika, along with a pinch of salt and pepper. Stir to combine well, cooking for an additional 1-2 minutes to allow the spices to release their flavors.

        Incorporate Beans and Corn: Add the rinsed black beans and corn into the skillet. Stir well to combine and heat through for about 2 more minutes. Remove from heat and fold in the shredded cheese until melted and creamy.

          Assemble the Taco Rolls: Place a flour tortilla flat on a clean surface. Spoon 2-3 tablespoons of the meat and cheese mixture into the center of the tortilla. Roll it tightly from one end to the other, making sure to tuck in the sides as you roll to seal. Repeat this process with the remaining tortillas and filling.
