Preheat your air fryer to 375°F (190°C) for about 5 minutes while you prepare the stuffing mixture.
In a large bowl, combine the stale bread cubes with vegetable broth. Toss until the bread is evenly soaked, then let it sit for about 10 minutes to absorb the liquid.
In a skillet over medium heat, melt the butter. Add the chopped celery and onion, sautéing until softened (about 5-7 minutes). Stir in the sage, thyme, garlic powder, salt, and pepper. Cook for an additional 1-2 minutes until fragrant.
Add the sautéed mixture to the soaked bread cubes. If using, fold in the shredded cheese, dried cranberries, or chopped walnuts. Mix until everything is well combined.
Scoop out small portions of the stuffing mixture (about 1-2 tablespoons each) and shape them into small balls or patties. You should get around 20-25 bites depending on size.
Lightly spray the air fryer basket with cooking spray. Place the stuffing bites in a single layer in the basket, making sure to leave some space between each for even cooking. You may need to do this in batches. Lightly spray the tops of the bites with cooking spray.
Air fry your stuffing bites for 10-12 minutes, flipping halfway through, or until they are golden brown and crispy on the outside.
Remove the stuffing bites from the air fryer and cool slightly before serving. These make a fantastic appetizer or side dish, ideal for any holiday gathering!
