8 oz (225g) pasta of your choice (spaghetti or fettuccine are excellent options)

2 cups (300g) mushrooms, sliced (cremini or button mushrooms are recommended)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup (240ml) vegetable broth

1 cup (240ml) coconut milk (use full-fat for a creamier texture)

2 tablespoons nutritional yeast

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Cook the Pasta: Start by bringing a large pot of salted water to a rolling boil. Add your chosen pasta and cook according to the package directions until it reaches an al dente texture. Once done, drain the pasta, reserving about 1/2 cup of the starchy pasta water for later use.

    Sauté the Vegetables: In a large skillet set over medium heat, pour in the olive oil. Once heated, add the finely chopped onion and sauté for approximately 2-3 minutes until it turns translucent and fragrant. Next, add the minced garlic, continuing to sauté for another 1-2 minutes, stirring constantly to avoid burning.

      Cook the Mushrooms: Introduce the sliced mushrooms to the skillet. Sauté them for about 5-7 minutes, stirring occasionally, until they turn golden brown and release their moisture, allowing for even cooking.

        Create the Sauce: Slowly pour in the vegetable broth and coconut milk, mixing them together thoroughly. Bring the mixture to a gentle simmer.
