2 cans (15 oz each) cannellini beans, thoroughly drained and rinsed

4 cups vegetable broth

1 cup heavy cream or coconut cream (for a dairy-free alternative)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup diced carrots

2 cups fresh spinach, roughly chopped

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon red pepper flakes (adjust based on your heat preference)

2 tablespoons olive oil

Salt and pepper, to taste

Juice of 1 lemon

Fresh basil leaves, for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and diced carrots. Sauté for approximately 5 minutes, stirring occasionally, until the onion becomes translucent and the carrots soften slightly. Stir in the minced garlic, dried oregano, dried thyme, and red pepper flakes, cooking for an additional minute until fragrant.

    Add the Beans and Broth: Pour in the rinsed cannellini beans and vegetable broth, stirring to combine. Increase the heat and bring the mixture to a gentle simmer. Allow it to cook for about 10 minutes, which will help the beans absorb the flavors of the aromatics.
