12 oz (340g) pasta (penne or fusilli)

1 tablespoon olive oil

3 cloves garlic, minced

1 onion, finely chopped

1 can (14 oz) diced tomatoes (with juice)

1 cup heavy cream

2 cups fresh spinach, roughly chopped

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper to taste

1/2 cup grated Parmesan cheese (plus additional for serving)

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente, usually around 8-10 minutes. Before draining, reserve about 1 cup of the pasta water. Drain and set the pasta aside.

    Sauté Aromatics: In the same pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté until it is translucent and tender, approximately 3-5 minutes. Then, stir in the minced garlic and cook for an additional 1-2 minutes, or until fragrant.

      Add Tomatoes: Carefully pour in the can of diced tomatoes (with their juice) and bring everything to a gentle simmer. Season with salt, pepper, dried basil, and oregano. Allow the mixture to cook for about 5-7 minutes, letting the flavors meld together beautifully.
