1/2 cup heavy cream (or coconut cream for a dairy-free option)

1/4 cup fresh basil leaves, roughly chopped

Optional: 1 tablespoon balsamic vinegar for extra depth of flavor

4 slices of sourdough or whole grain bread

4 slices of sharp cheddar cheese (or your preferred cheese variety)

2 tablespoons butter, softened

Making the Tomato Basil Soup:

      - Pour in the crushed tomatoes and vegetable broth, then add the sugar, salt, and black pepper. Stir everything together and bring the mixture to a gentle simmer. Allow it to simmer uncovered for about 20 minutes, which will help meld the flavors beautifully.

        - Once simmered, remove the pot from the heat. Using an immersion blender, puree the soup until smooth in texture. If you don’t have an immersion blender, carefully transfer the soup in batches to a traditional blender and blend until smooth.
