1 cup quinoa, rinsed thoroughly

2 cups vegetable broth

1 can (14.5 oz) diced tomatoes, drained

1 cup cherry tomatoes, halved

1 cup fresh basil leaves, roughly chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese, divided

3 cloves garlic, finely minced

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional, adjust to taste)

Salt and freshly ground pepper to taste

2 tablespoons extra virgin olive oil

Fresh basil leaves, for garnish

Cover the saucepan and let it simmer for about 15 minutes, or until the quinoa is fluffy and all the liquid has been absorbed. Once done, remove it from heat and allow it to cool slightly.

      Prepare the Sauce: In a large mixing bowl, thoroughly combine the drained diced tomatoes, halved cherry tomatoes, minced garlic, olive oil, ricotta cheese, half of the mozzarella, and half of the Parmesan cheese.
