12 oz fettuccine or your favorite pasta

2 cups fresh spinach, roughly chopped

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

A pinch of nutmeg (optional)

Fresh parsley, chopped (for garnish)

Extra grated Parmesan, for serving

Cook the Pasta: In a large pot, bring a generous amount of salted water to a rolling boil. Add the fettuccine (or your choice of pasta) and cook according to the package instructions until it's al dente. Before draining, reserve 1 cup of the pasta water to adjust the sauce later if needed. Drain the pasta and set it aside.

    Sauté the Spinach: Heat the olive oil in a large skillet over medium heat. Once hot, add the minced garlic and sauté for about 1 minute until it becomes fragrant but is not browned. Next, add the roughly chopped spinach to the skillet and cook, stirring occasionally, until just wilted, about 2-3 minutes.

      Prepare the Alfredo Sauce: Lower the heat to a gentle simmer. Pour in the heavy cream, stirring well to combine with the garlic and spinach. Gradually sprinkle in the grated Parmesan cheese, continuing to stir until the cheese is fully melted and the sauce reaches a creamy consistency. Season your sauce with garlic powder, onion powder, salt, pepper, and a pinch of nutmeg if desired.

        Mix Pasta with Sauce: Add the drained pasta to the skillet, tossing gently to ensure every strand is well coated in the luscious cream sauce. If the sauce appears too thick, gradually add the reserved pasta water, a little at a time, until you achieve your preferred creamy consistency.
