Ingredients

12 oz pasta (fettuccine, penne, or your favorite type)

1 cup fresh spinach, finely chopped

1 cup canned artichoke hearts, drained and roughly chopped

2 tablespoons extra virgin olive oil

2 cloves garlic, minced

1 cup heavy whipping cream

1/2 cup cream cheese, softened to room temperature

1/2 cup freshly grated Parmesan cheese

1 teaspoon fresh lemon juice

Salt and freshly cracked pepper, to taste

Red pepper flakes (optional, for a touch of heat)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta:

Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente. Before draining, reserve about 1 cup of pasta water. Drain the pasta and set it aside in a separate bowl.

      Sauté the Vegetables:

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for approximately 1 minute, or until fragrant. Incorporate the chopped spinach and artichoke hearts into the skillet, cooking for an additional 2-3 minutes, until the spinach is wilted and vibrant.

          Prepare the Cream Sauce:

Reduce the heat to low and gradually pour in the heavy cream, stirring continuously to combine. Add the softened cream cheese, mixing until it melts completely and creates a smooth, creamy consistency. If the sauce appears too thick, gradually add reserved pasta water until the desired creaminess is achieved.

              Add Cheese and Seasoning:

Stir the grated Parmesan cheese into the sauce until melted and integrated smoothly. Add lemon juice, then season with salt, freshly cracked pepper, and red pepper flakes (if desired). Taste and adjust the seasoning as necessary.

                  Combine Pasta with Sauce:

Gently add the drained pasta into the skillet, tossing to ensure each piece is well-coated in the creamy sauce. If the sauce seems too sparse, add more of the reserved pasta water until it clings beautifully to the pasta.

                      Serve and Garnish:

Plate the creamy spinach artichoke pasta generously, and finish with a sprinkle of freshly chopped parsley for a burst of color. Serve immediately while piping hot, and savor the rich, creamy goodness!
