8 oz (about 225g) pasta (penne or fusilli works well)

2 tablespoons olive oil

1 pound (450g) Italian sausage (mild or spicy, casings removed)

1 medium onion, thinly sliced

1 bell pepper (red or yellow), sliced

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon crushed red pepper flakes (optional)

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta and set it aside. Be sure to reserve 1/2 cup of the pasta water for later use.
