1 lb (450g) Italian sausage (choose between mild or spicy according to your taste)

4 medium russet potatoes, peeled and thinly sliced

1 medium onion, finely diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, carrots, corn)

2 tablespoons olive oil

1 tablespoon dried thyme

1 tablespoon dried rosemary

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C) so it reaches the desired temperature while you prepare the casserole.

    Cook the Sausage: In a large skillet, heat the olive oil over medium heat. Once hot, add the Italian sausage, using a spatula to break it apart as it cooks. Sauté until browned and fully cooked through, approximately 5-7 minutes. Carefully drain any excess fat from the skillet and set the sausage aside for later use.

      Sauté Vegetables: In the same skillet, add the finely diced onion and minced garlic. Sauté for about 3-4 minutes, or until the onions become translucent and fragrant, stirring occasionally.

        Combine Ingredients: In a large mixing bowl, combine the cooked sausage, sautéed onion and garlic, thinly sliced potatoes, frozen mixed vegetables, heavy cream, chicken broth, dried thyme, dried rosemary, and a sprinkling of salt and pepper. Mix gently but thoroughly until all the ingredients are well incorporated.

          Layer the Casserole: Lightly grease a 9x13 inch (23x33 cm) baking dish. Spoon half of the sausage and potato mixture into the dish, spreading it evenly. Next, sprinkle half of the shredded cheddar cheese over this layer. Add the remaining sausage and potato mixture on top, followed by the last of the shredded cheese to create a melty topping.

            Bake: Cover the baking dish loosely with aluminum foil and place it in the preheated oven. Bake for 30 minutes. After this initial time, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and bubbling, and the potatoes are tender when pierced with a fork.

              Garnish and Serve: Once baked, carefully remove the casserole from the oven and allow it to sit for a few minutes to settle. Just before serving, sprinkle freshly chopped parsley over the top for a pop of color and flavor.
