1 head of garlic

4 tablespoons unsalted butter

1 cup heavy cream

1/2 cup sour cream

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut off the top 1/4 inch of the garlic bulb to expose the cloves. Drizzle with a teaspoon of olive oil, wrap it tightly in aluminum foil, and place it in the preheated oven. Roast for 30-35 minutes until the garlic is soft and caramelized. Remove from the oven and let it cool slightly before handling.

    Boil the Potatoes: While the garlic is roasting, fill a large pot with cold water and add a generous pinch of salt. Add the peeled and cubed Yukon Gold potatoes.
