1 pound elbow macaroni

1 whole head of garlic

2 tablespoons olive oil

4 tablespoons unsalted butter

4 tablespoons all-purpose flour

2 cups whole milk

1 cup heavy cream

1 ½ cups sharp cheddar cheese, shredded

1 cup Gruyère cheese, shredded

1 teaspoon paprika

½ teaspoon nutmeg

Salt and pepper to taste

½ cup breadcrumbs (for topping)

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the individual cloves. Drizzle the exposed cloves with olive oil, wrap the entire head in aluminum foil, and place it in the oven. Roast for 30-35 minutes, or until the cloves are golden and soft. Once roasted, allow the garlic to cool slightly, then squeeze the softened cloves into a small bowl and set aside.

    Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to the package instructions until al dente. Drain the pasta in a colander and set it aside for later use.
