2 whole bulbs of garlic

1 tablespoon olive oil

12 ounces fettuccine pasta

2 cups heavy cream

1 cup freshly grated Parmesan cheese

1/2 cup unsalted butter

Salt and black pepper, to taste

1 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional)

Fresh parsley, finely chopped (for garnish)

Roast the Garlic: Preheat your oven to 400°F (200°C). Prepare the garlic by slicing the tops off the bulbs to expose the cloves. Drizzle with olive oil and wrap each bulb in aluminum foil. Place the foil packets on a baking sheet and roast for 30-35 minutes until the garlic is soft and caramelized. Allow to cool slightly, then squeeze the roasted garlic out of the skins into a bowl, discarding the skins.

    Cook the Pasta: While the garlic roasts, fill a large pot with water and add a generous amount of salt. Bring the water to a rolling boil. Add the fettuccine and cook according to the package directions until al dente, usually about 8-10 minutes. Before draining, reserve 1 cup of the pasta water, then drain the pasta and set aside.
