2 boneless, skinless chicken breasts, thinly sliced

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

3 cloves garlic, minced

1 cup heavy cream

1/2 cup pesto (store-bought or homemade)

1/2 cup freshly grated Parmesan cheese

1/4 cup sun-dried tomatoes, chopped (optional)

Fresh basil leaves, for garnish

Chili flakes, for a hint of heat (optional)

Cook the Pasta: Start by bringing a large pot of salted water to a rolling boil. Add the fettuccine and cook according to the package instructions until al dente, usually about 8-10 minutes. Before draining, reserve 1/2 cup of the starchy pasta water to adjust the sauce later if needed. Drain the pasta and set it aside.

    Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the thinly sliced chicken breasts generously with salt and freshly ground black pepper. Once the oil is hot, add the seasoned chicken to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Check that the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and set it aside on a plate.

      Prepare the Creamy Pesto Sauce: Use the same skillet to make the sauce (no need to wash it). Reduce the heat to medium and add the minced garlic. Sauté for about 1 minute, stirring frequently, until the garlic is fragrant but not browned. Slowly pour in the heavy cream while stirring to combine. Let the mixture simmer for 2-3 minutes, allowing it to thicken slightly. Add in the pesto and grated Parmesan cheese, stirring continuously until the sauce is smooth and creamy.

        Combine Pasta and Chicken: Return the cooked fettuccine and sautéed chicken to the skillet with the creamy pesto sauce. Gently toss everything together until the pasta and chicken are well coated. If the sauce seems too thick, gradually add a bit of the reserved pasta water until you reach your desired consistency.
