Creamy One-Pot Chicken and Broccoli Pasta

1 lb (450g) chicken breast, diced into bite-sized pieces

2 cups broccoli florets (fresh or frozen)

8 oz (225g) pasta (penne or fusilli recommended)

1 small onion, finely diced

3 cloves garlic, minced

4 cups chicken broth (low-sodium for a healthier option)

1 cup heavy cream

1 cup grated Parmesan cheese (plus extra for serving, if desired)

2 tablespoons olive oil

1 teaspoon Italian seasoning

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken, season with salt and pepper, and cook for 5-6 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the pot and set it aside on a plate.

    Sauté the Aromatics: In the same pot, add the diced onion and sauté for about 3 minutes or until the onion becomes translucent. Then, add the minced garlic and cook for an additional 30 seconds until fragrant, making sure not to let it burn.

      Cook the Pasta: Pour the chicken broth into the pot and bring it to a rolling boil. Once boiling, add the pasta and Italian seasoning. Stir well, then reduce the heat to a gentle simmer. Cook for about 8-10 minutes, stirring occasionally, until the pasta is al dente.

        Incorporate the Broccoli: For the last 3-4 minutes of pasta cooking, add the broccoli florets into the pot. This will cook the broccoli until it’s bright green and tender but still crisp.

          Create the Creamy Sauce: After the pasta is cooked, stir in the heavy cream and grated Parmesan cheese. Mix thoroughly until the cheese has melted into the sauce. If the sauce is too thick for your liking, add a splash more chicken broth or water to adjust the consistency.

            Combine Chicken and Adjust Flavor: Return the cooked chicken to the pot and stir well to combine all ingredients. Taste the dish and adjust the seasoning with additional salt, pepper, or Italian seasoning as needed for optimal flavor.
