12 lasagna noodles

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

16 oz (450g) fresh mushrooms, sliced (cremini or button)

5 oz (140g) fresh spinach, roughly chopped

1 teaspoon Italian seasoning

Salt and pepper, to taste

1 cup ricotta cheese

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

2 cups heavy cream

1/4 cup fresh basil, chopped (optional for garnish)

Instructions
 

Preheat the Oven: Set your oven temperature to 375°F (190°C) to prepare for baking.

    Cook the Lasagna Noodles: Fill a large pot with water, add a generous amount of salt, and bring it to a boil. Cook the lasagna noodles according to the package instructions until they are al dente. Once cooked, drain the noodles and lay them out flat to prevent sticking.

      Prepare the Mushroom Spinach Filling:

        - In a large skillet, warm the olive oil over medium heat. Add the finely chopped onions and cook, stirring occasionally, until they turn translucent, about 5 minutes.

          - Incorporate the minced garlic and sauté for an additional minute until it becomes fragrant.

            - Add the sliced mushrooms to the skillet. Sauté until the mushrooms have released their moisture and are nicely caramelized, approximately 8-10 minutes.

              - Fold in the chopped spinach, Italian seasoning, salt, and pepper. Continue cooking until the spinach is wilted, which should take about 2-3 minutes. Remove the skillet from heat and allow the filling to cool slightly.

                Make the Cream Sauce: In a medium saucepan, combine the heavy cream with half of the grated Parmesan cheese. Heat the mixture over low to medium heat, stirring occasionally, until it is warmed through. Season with salt and pepper to taste before removing from heat.

                  Assemble the Lasagna:

                    - Spread a thin layer of the cream sauce on the bottom of a large baking dish to prevent sticking.

                      - Position three lasagna noodles atop the cream sauce. Distribute half of the mushroom-spinach filling evenly over the noodles, followed by spooning half of the ricotta cheese on top and a sprinkle of mozzarella.

                            Bake the Lasagna: Cover the baking dish tightly with aluminum foil and place it in the oven. Bake for 30 minutes. After this time, carefully remove the foil and continue to bake for an additional 15-20 minutes, or until the cheese is bubbling and golden brown.
