Ingredients

1 cup elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup whole milk

1 cup sharp cheddar cheese, shredded

½ cup mozzarella cheese, shredded

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and pepper to taste

¼ cup breadcrumbs

2 tablespoons grated Parmesan cheese

2 tablespoons chopped fresh parsley (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Lightly grease a muffin tin with non-stick cooking spray or softened butter to prevent sticking.

Cook the Macaroni: In a large pot, bring a generous amount of salted water to a rolling boil. Add the elbow macaroni and cook according to the package instructions until al dente. Once cooked, drain the macaroni and set it aside.

Prepare the Cheese Sauce: In the same pot, melt the unsalted butter over medium heat. As soon as the butter is melted, whisk in the all-purpose flour to form a roux. Cook this mixture for about 1-2 minutes, stirring constantly, until it achieves a light golden color and is bubbling slightly.

Incorporate the Milk: Gradually pour the whole milk into the roux, whisking continuously to prevent the formation of lumps. Continue to cook this mixture while stirring for about 3-5 minutes, or until it thickens to a creamy consistency.

Melt the Cheeses: Reduce the heat to low and add both the sharp cheddar and mozzarella cheeses to the pot. Stir the mixture until all the cheese has melted and the sauce is smooth. Season the cheese sauce with garlic powder, onion powder, salt, and pepper to taste.

Combine with Macaroni: Carefully stir the cooked macaroni into the cheese sauce until every piece is evenly coated with the creamy goodness.

Fill the Muffin Tins: Using a spoon, fill each muffin cup with the creamy macaroni and cheese mixture, ensuring to pack it in tightly for a good shape.

Add the Breadcrumb Topping: In a small bowl, combine the breadcrumbs and grated Parmesan cheese. Evenly sprinkle this crispy topping mixture over the mac and cheese cups for an extra crunch.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and crispy.

Cool and Serve: After baking, allow the mac and cheese cups to cool for a few minutes before gently removing them from the muffin tin. For a fresh touch, sprinkle the chopped parsley over the top before serving. Enjoy your irresistibly cheesy bites!
