8 oz (225g) fettuccine or spaghetti

2 tablespoons olive oil

4 cloves of garlic, finely minced

8 oz (225g) mushrooms, sliced (cremini or button)

1 cup heavy cream

1/2 cup freshly grated Parmesan cheese

1 teaspoon dried thyme

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes (for a spicy kick)

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the fettuccine or spaghetti and cook according to the package instructions until al dente. Before draining, reserve 1/2 cup of the starchy pasta water. Drain the pasta and set it aside.

    Sauté the Garlic and Mushrooms: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 30 seconds, stirring constantly until fragrant. Be cautious to avoid burning the garlic.

      Add the Mushrooms: Add the sliced mushrooms to the skillet and cook for about 4-5 minutes. Stir occasionally, allowing the mushrooms to caramelize and release their moisture, achieving a golden-brown color.

        Make the Cream Sauce: Reduce the heat to medium-low. Pour the heavy cream into the skillet with the sautéed mushrooms. Stir well to combine the ingredients. Gradually add the grated Parmesan cheese, dried thyme, and season with salt and black pepper. Mix until the cheese is melted and the sauce becomes rich and creamy.
