1 lb (450g) boneless, skinless chicken breasts, diced into bite-sized pieces

1 tablespoon olive oil

1 small onion, finely diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 can (15 oz) black beans, drained and rinsed thoroughly

1 cup corn kernels (fresh, frozen, or canned, drained)

1 packet taco seasoning (approximately 1 oz)

1 cup heavy cream

1 cup shredded cheddar cheese

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Heat the Olive Oil: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the diced chicken. Cook for approximately 6-8 minutes, stirring occasionally, until the chicken is browned and cooked through. Season with salt and pepper to enhance flavor.

    Sauté the Vegetables: Add the diced onion, minced garlic, and both diced bell peppers to the skillet. Sauté for about 4-5 minutes until the vegetables are tender and fragrant, stirring frequently to prevent burning.
