Creamy Chicken and Spinach Pasta Skillet

12 oz (340g) fettuccine or penne pasta

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

Salt and freshly ground black pepper to taste

4 cloves garlic, minced

1 teaspoon Italian seasoning blend

1 cup low-sodium chicken broth

1 cup heavy cream

1 cup freshly grated Parmesan cheese

5 oz (140g) fresh spinach, roughly chopped

½ teaspoon red pepper flakes (optional, for added heat)

Fresh basil leaves, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Cook the pasta according to the package instructions until it is al dente, ensuring it has a slight bite. Reserve ½ cup of pasta water before draining the pasta and set aside.

    Prepare the Chicken: In a large skillet over medium heat, add the olive oil. Season the chicken pieces generously with salt and black pepper. Once the oil is shimmering, add the seasoned chicken to the skillet. Sauté for approximately 6-7 minutes, turning occasionally, until the chicken is golden brown and fully cooked. Remove the chicken from the skillet and set aside on a plate.

      Sauté the Garlic: In the same skillet, add the minced garlic and sprinkle in the Italian seasoning. Sauté for about 1 minute or until the garlic is fragrant, taking care not to let it brown.

        Make the Creamy Sauce: Pour the chicken broth into the skillet, using a spatula to scrape up any flavorful brown bits stuck to the bottom. Allow the broth to simmer for 2-3 minutes. Next, add the heavy cream and grated Parmesan cheese, stirring continuously until the cheese has melted and the sauce is velvety. If the sauce becomes too thick, gradually stir in some of the reserved pasta water until the desired consistency is achieved.

          Incorporate Spinach and Chicken: Gently fold in the chopped spinach and the cooked chicken pieces into the skillet. Cook for an additional 2-3 minutes, just until the spinach wilts down. If you desire a bit of spiciness, add the red pepper flakes during this step.

            Combine with Pasta: Add the drained pasta to the creamy sauce mixture in the skillet. Toss everything together thoroughly until the pasta is evenly coated in the luscious sauce. Taste and adjust the seasoning with a bit more salt and pepper if needed.
