Creamy Chicken and Spinach One-Pot Pasta

1 lb (450g) boneless, skinless chicken breasts, diced

8 oz (225g) penne pasta

4 cups (950ml) chicken broth

1 cup (240ml) heavy cream

3 cups fresh spinach, roughly chopped

1 medium onion, diced

3 cloves garlic, minced

1 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp Italian seasoning

Salt and pepper, to taste

Optional: crushed red pepper flakes, for a bit of spice

Instructions
 

Sauté the Chicken: In a large pot or deep skillet, heat the olive oil over medium-high heat. Add the diced chicken breasts, seasoning them with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked. Once done, remove the chicken from the pot and set aside on a plate.

    Cook the Aromatics: In the same pot, add the diced onion and sauté for about 3-4 minutes, until it becomes translucent. Add the minced garlic and continue to sauté for an additional minute, ensuring it doesn’t burn; you want it fragrant and soft.

      Add the Pasta and Broth: Return the cooked chicken to the pot, along with the penne pasta and chicken broth. Stir the mixture well to ensure the pasta is fully submerged in the liquid.

        Simmer: Bring the mixture to a rolling boil, then reduce the heat and allow it to simmer on low. Cover the pot and let it cook for 10-12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid has been absorbed.

          Incorporate Cream and Spinach: Lower the heat to low and add the heavy cream and chopped spinach into the pot. Stir continuously until the spinach has wilted and the sauce becomes creamy. If the sauce appears too thick, gradually add more chicken broth or a splash of water to achieve your desired consistency.

            Finish with Cheese: Remove the pot from the heat and fold in the grated Parmesan cheese, mixing until melted and smooth. Taste and adjust seasoning with any additional salt, pepper, or crushed red pepper flakes, depending on your spice preference.

              Serve: Serve the pasta hot, garnished with extra Parmesan cheese and a sprinkle of freshly cracked black pepper for added flavor.
