1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup long-grain white rice

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

2 cups low-sodium chicken broth

1 cup heavy cream

1 cup frozen peas and carrots mix

1 teaspoon dried thyme

½ teaspoon paprika

Salt and freshly ground black pepper to taste

Fresh parsley, chopped (for garnish)

Heat the Oil and Sear the Chicken: In a large skillet, heat the olive oil over medium heat. Once the oil is shimmering, add the diced chicken along with a sprinkle of salt, pepper, and paprika. Sauté the chicken for 5-7 minutes, stirring occasionally, until it is golden brown and cooked through. Once done, transfer the chicken to a plate and set aside.

    Sauté Aromatics for Flavor: In the same skillet, add the chopped onion and cook for about 3-4 minutes until it turns soft and translucent, stirring occasionally to prevent burning. Add the minced garlic and sauté for an additional minute until it releases its fragrant aroma.
