8 oz. penne pasta

2 cups broccoli florets (fresh or frozen)

1 lb. boneless skinless chicken breast, diced into bite-sized pieces

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and freshly cracked black pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Fill a large pot with water and bring it to a rolling boil. Once boiling, generously add salt to the water and toss in the penne pasta. Cook according to the package instructions until al dente, about 8-10 minutes. In the last 2 minutes of cooking, add the broccoli florets. Drain the pasta and broccoli together, then set aside.

    Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the diced chicken breast to the skillet, seasoning it with salt and pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and no longer pink in the center. Once done, transfer the chicken to a plate and set aside.

      Sauté Onion and Garlic: Using the same skillet, add the chopped onion. Sauté for about 3-4 minutes, or until it becomes translucent and soft. Then, add the minced garlic and continue to sauté for an additional minute, allowing the garlic to become fragrant but not burnt.

        Make the Sauce: Pour the chicken broth into the skillet, bringing it to a gentle simmer. Slowly stir in the heavy cream, grated Parmesan cheese, and Italian seasoning. Cook the mixture for 3-5 minutes, stirring occasionally, until the sauce thickens slightly and becomes creamy.

          Combine Everything: Add the cooked chicken, drained pasta, and broccoli into the skillet with the sauce. Toss all the components together, ensuring everything is coated in the creamy sauce and heated through. Taste and adjust seasoning with additional salt and pepper if desired.

            Serve: Once heated through, transfer the creamy chicken and broccoli pasta to serving plates. Garnish with freshly chopped parsley for a burst of color and fresh flavor. Serve immediately while warm and enjoy!
