Creamy Chicken and Broccoli Alfredo Skillet

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

2 cups fresh broccoli florets

8 oz (225g) fettuccine pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: Fill a large pot with water and add a generous amount of salt. Bring the water to a rolling boil. Add the fettuccine pasta and cook according to the package instructions until al dente, typically around 8-10 minutes. In the final 3 minutes of cooking, gently add the broccoli florets into the pot. Once the pasta and broccoli are cooked, drain the mixture, reserving a small cup of pasta water, and set aside.

    Sauté the Chicken: Heat a large skillet over medium heat and add the olive oil. Once the oil is shimmering, add the bite-sized chicken pieces. Season the chicken with salt, pepper, and Italian seasoning. Sauté for about 6-8 minutes, stirring occasionally, until the chicken is thoroughly cooked and golden brown. Transfer the cooked chicken to a plate and set aside.

      Make the Alfredo Sauce: In the same skillet, lower the heat to medium-low and add the minced garlic. Sauté for about 30 seconds, or until the garlic is fragrant and lightly golden. Next, pour in the heavy cream, stirring constantly to prevent scorching. Bring the cream to a gentle simmer and gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy.

        Combine Everything: Return the sautéed chicken and the drained fettuccine with broccoli into the skillet with the Alfredo sauce. Using tongs or a spatula, gently toss everything together until well combined and heated through. If the sauce appears too thick, add a splash of the reserved pasta water to reach your desired creaminess.
