1 medium head of cauliflower (approximately 4 cups when riced)

1 tablespoon olive oil

3 cloves garlic, minced

1 small onion, finely chopped

1 cup heavy cream

1 cup shredded sharp cheddar cheese

1/2 cup cream cheese, softened

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

1/4 cup chopped fresh parsley, for garnish

Optional: 1/4 cup grated Parmesan cheese for an extra cheesy kick

Prep the Cauliflower: Begin by removing the leaves and thick stem from the cauliflower head. Cut it into smaller florets to facilitate ricing. If you own a food processor, pulse the florets until they resemble small grains of rice. Alternatively, if you don’t have a food processor, use a box grater to achieve the same riced texture.

    Sauté Aromatics: Heat the olive oil in a large skillet over medium heat. Once heated, add the finely chopped onion. Sauté for about 3-4 minutes until the onion is translucent, stirring occasionally. Add the minced garlic to the skillet and continue cooking for an additional minute, until the garlic is fragrant and lightly golden.

      Cook the Cauliflower Rice: Incorporate the riced cauliflower into the skillet with the onion and garlic mixture. Stir everything together to ensure the cauliflower is evenly coated. Cook for approximately 5-7 minutes, stirring occasionally, until the cauliflower is tender yet retains a slight bite (be careful not to overcook).

        Make it Creamy: Lower the heat to a gentle simmer. Gradually pour in the heavy cream, followed by the softened cream cheese. Stir continuously until the cream cheese is fully melted and the mixture becomes smooth and creamy.
