12 oz fettuccine or spaghetti

2 ripe avocados, pitted and peeled

2 cloves garlic, minced

1/4 cup fresh basil leaves, tightly packed

2 tablespoons freshly squeezed lemon juice (from about 1 lemon)

1/4 cup high-quality extra virgin olive oil

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional for a kick)

1/2 cup freshly grated Parmesan cheese (plus extra for serving)

1 cup cherry tomatoes, halved (for garnish)

Fresh basil leaves (for garnishing)

Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the fettuccine or spaghetti and cook according to the package instructions until it reaches an al dente texture. Before draining, reserve about 1 cup of the pasta water. Then, drain the pasta and set it aside.

    Prepare the Avocado Sauce: In a food processor or blender, combine the peeled avocados, minced garlic, fresh basil leaves, lemon juice, and a generous pinch of salt and pepper. Blend the ingredients until you achieve a smooth, creamy consistency. While blending, slowly drizzle in the olive oil until it is fully incorporated and the sauce is silky.

      Combine Pasta and Sauce: In the same pot used for cooking the pasta (remove it from the heat), add the drained pasta and pour the creamy avocado sauce over it.
