Ingredients

2 cups cooked chicken breast, diced (approximately 2 medium-sized breasts)

1 cup fresh cranberries, chopped (or use ½ cup dried cranberries for a sweeter option)

½ cup almonds, sliced or slivered for extra crunch

½ cup celery, finely chopped for a refreshing crunch

½ cup red grapes, halved (green grapes may be used as a substitute)

½ cup plain Greek yogurt for creaminess

¼ cup mayonnaise for added richness

1 tablespoon Dijon mustard for a subtle zing

1 tablespoon honey (optional, for a hint of sweetness)

1 tablespoon apple cider vinegar for brightness

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

Mixed greens or lettuce leaves (for serving)

Instructions

In a large mixing bowl, combine the diced cooked chicken, chopped cranberries, sliced almonds, finely chopped celery, and halved grapes. Gently toss to mix the ingredients evenly.

In a separate smaller bowl, whisk together the Greek yogurt, mayonnaise, Dijon mustard, honey (if using), and apple cider vinegar until the mixture is smooth and creamy. This will be your dressing.

Pour the dressing over the chicken mixture. Using a spatula, gently fold the dressing into the chicken mixture until all ingredients are thoroughly coated.

Taste the salad and season with salt and pepper according to your preference. For additional sweetness or tang, adjust with more honey or apple cider vinegar as desired.

Cover the mixing bowl with plastic wrap or a lid and refrigerate the chicken salad for at least 30 minutes. This chilling step helps the flavors meld together beautifully.

Before serving, stir the salad gently to re-distribute the dressing, and taste again to ensure the seasoning is to your liking, making any final adjustments as necessary.

Serve the cranberry almond chicken salad on a bed of mixed greens or nestled within a sandwich, wrap, or buttery croissant. Garnish with freshly chopped parsley on top for a pop of color and flavor.
