  • 1.0 cup rolled oats
  • 2.0 cups almond milk
  • 2.0 tablespoons pure maple syrup
  • 0.5 teaspoon vanilla extract
  • 0.25 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cup chopped pecans
  • 0.25 cup dried cranberries or raisins
  • 0.0 none fresh fruit for topping
  • 0.0 none additional maple syrup for drizzling

Instructions
 

  • In a large mixing bowl, combine the rolled oats, almond milk, maple syrup, vanilla extract, ground cinnamon, and salt. Stir well until all the ingredients are thoroughly mixed.
  • Gently fold in the chopped pecans and dried cranberries or raisins if you're using them.
  • Divide the mixture evenly into jars or airtight containers. Ensure that each serving has a decent amount of pecans and fruit evenly mixed in.
  • Seal the jars tightly and place them in the refrigerator. Allow the overnight oats to chill and soak up the flavors for at least 4 hours, preferably overnight.
  • In the morning, give your oats a good stir. If the mixture is too thick, you can add a splash more milk to reach your desired consistency.
  • Top with fresh fruit (like banana slices or berries), a sprinkle of additional pecans, and a drizzle of maple syrup if desired.
