4 boneless, skinless chicken breasts

1 cup Swiss cheese, shredded

1 cup mushrooms, finely chopped (button or cremini)

1 cup fresh spinach, chopped

3 cloves garlic, minced

1 small onion, diced

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon salt

½ teaspoon black pepper

½ cup breadcrumbs (optional, for extra crunch)

¼ cup fresh parsley, chopped (for garnish)

½ cup chicken broth (for baking)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C) to ensure it’s hot and ready for baking.

    Sauté the Filling: In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, sautéing them until the onion becomes translucent and soft, which should take about 2-3 minutes. Next, stir in the finely chopped mushrooms and cook until they turn golden and their moisture evaporates, approximately 5 minutes. Finally, add the chopped spinach and cook just until it wilts—about 2 minutes. Season the mixture with dried thyme, salt, and black pepper, then remove from heat.

      Mix in the Cheese: In a mixing bowl, combine the sautéed mushroom mixture with the shredded Swiss cheese. Mix well to ensure an even distribution of flavors.

        Prepare the Chicken: Place each chicken breast between two sheets of plastic wrap. Using a meat mallet or a rolling pin, gently pound the chicken breasts to an even thickness of about ½ inch, which will ensure they cook evenly.

          Stuff the Chicken: Take a generous portion of the mushroom and cheese mixture and place it in the center of each chicken breast.
