Cozy Creamy Mushroom and Spinach Risotto

1 cup Arborio rice

500g fresh mushrooms (cremini or button), sliced

2 cups fresh spinach, roughly chopped

1 small yellow onion, finely chopped

3 cloves garlic, minced

4 cups vegetable or chicken broth, warmed

1 cup dry white wine (optional)

1 cup grated Parmesan cheese

2 tablespoons olive oil

2 tablespoons butter

Salt and pepper to taste

Fresh parsley, chopped for garnish (optional)

Sauté the Aromatics: In a large, heavy-bottomed pot, heat the olive oil and 1 tablespoon of butter over medium heat. Add the finely chopped onion and minced garlic. Cook, stirring frequently, until the onions become translucent, about 2-3 minutes.

    Cook the Mushrooms: Add the sliced mushrooms to the pot. Season them with a pinch of salt and pepper. Sauté the mushrooms for about 5-7 minutes, or until they are tender and begin to release their delicious juices.

      Toast the Rice: Add the Arborio rice into the pot with the mushrooms. Stir well and sauté for about 1-2 minutes. This allows the rice to absorb the flavors and become slightly translucent around the edges, enhancing its nutty taste.

        Deglaze with Wine: If you are using white wine, pour it into the pot and stir continuously. Cook until most of the wine has evaporated, about 2-3 minutes, leaving behind a rich, enhanced flavor.

          Add Broth Gradually: Begin adding the warmed broth, one ladle at a time, while stirring continuously. Allow the rice to absorb most of the liquid before adding the next ladle.
