Ingredients

2 cups fresh corn kernels (or 1 can of sweet corn, drained)

1/2 cup all-purpose flour

1/2 cup cornmeal

1 teaspoon baking powder

1 teaspoon sugar

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for a subtle kick)

1/4 cup chopped fresh parsley (or cilantro for a twist)

1 large egg

1/2 cup buttermilk (or regular milk with 1 tablespoon vinegar added)

Oil for frying (vegetable or canola)

Instructions

Prepare the Dry Mixture:

In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, sugar, salt, black pepper, and cayenne pepper (if using). Mix thoroughly until well combined.

      Incorporate Corn and Herbs:

Gently fold in the fresh corn kernels and chopped parsley (or cilantro) into the dry mixture. Ensure the corn and herbs are evenly coated with the flour mixture for better distribution in the batter.

          Whisk the Wet Ingredients:

In a separate bowl, crack the egg and add the buttermilk. Whisk together until fully combined and the mixture is smooth.

              Combine Wet and Dry Ingredients:

Pour the wet mixture into the bowl with the dry ingredients. Stir gently until just combined. The batter should be thick but cohesive; avoid overmixing to keep the fritters light and fluffy.

                  Heat the Oil:

In a large skillet, pour in enough oil to cover the bottom to about 1/4 inch deep. Heat the oil over medium heat until it shimmers. To test if the oil is hot enough, drop a small spoonful of batter in; it should sizzle immediately upon contact.

                      Fry the Fritters:

Using a tablespoon, scoop the batter and gently drop it into the hot oil. Flatten each fritter slightly with the back of the spoon. Fry in batches to prevent overcrowding. Cook for 3-4 minutes or until the underside is a golden brown, then carefully flip and cook for an additional 2-3 minutes.

                          Drain Excess Oil:

Once the fritters are cooked to a golden crisp, transfer them to a plate lined with paper towels to absorb any excess oil.

                              Serve and Enjoy:

Serve the fritters hot, garnished with extra chopped parsley. Pair with a zesty dipping sauce such as chipotle mayo, ranch dressing, or a lively lime aioli for added flavor.

                                  Prep Time, Total Time, Servings:
