1 cup Arborio rice (or any short-grain rice)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

16 oz (450g) mixed mushrooms (cremini, shiitake, and button), sliced

4 cups vegetable broth (substitute with chicken broth for a non-vegetarian option)

2 cups water

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and freshly ground black pepper, to taste

2 tablespoons soy sauce (to enhance umami flavor)

1 tablespoon lemon juice (to brighten the flavors)

Fresh parsley, chopped (for garnish)

1/4 cup heavy cream or coconut cream (optional, for added creaminess)

Instructions
 

Sauté the Aromatics: In a large saucepan, heat the olive oil over medium heat. Once the oil is hot, add the finely chopped onion. Sauté for about 5 minutes, or until the onion becomes translucent and soft. Stir in the minced garlic and continue to cook for another minute, until it becomes fragrant and golden.

    Cook the Mushrooms: Add the sliced mixed mushrooms to the saucepan. Cook for 8-10 minutes, stirring occasionally. You'll know they are done when they've released their moisture and have begun to brown slightly.
