6 large ripe tomatoes, cored and roughly chopped

1 medium cucumber, peeled and diced

1 red bell pepper, chopped

1 small red onion, chopped

2 cloves garlic, minced

1/4 cup fresh basil leaves, packed (plus extra for garnish)

2 tablespoons balsamic vinegar

2 tablespoons extra virgin olive oil

1 teaspoon sugar (optional, adjust to taste)

Salt and black pepper, to taste

1 cup vegetable or chicken broth, chilled

1/2 cup Greek yogurt or sour cream (optional, for added creaminess)

Prepare the Vegetables: Thoroughly wash all the vegetables under cold water. Core the tomatoes and chop them roughly. Peel and dice the cucumber, chop the red bell pepper, and finely chop the red onion. Combine all the chopped vegetables in a large mixing bowl.

    Blend the Ingredients: In a blender, add the chopped tomatoes, cucumber, red bell pepper, red onion, minced garlic, and fresh basil leaves. Blend the mixture until smooth but still slightly chunky to maintain texture. Depending on the capacity of your blender, you may need to blend the ingredients in batches.
