8 oz (about 225g) pasta (choose farfalle or penne for optimal texture)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1 cup fresh basil leaves, loosely packed

½ cup diced red bell pepper

¼ cup finely sliced red onion

½ cup black olives, pitted and sliced

Zest and juice of 2 large lemons

¼ cup extra virgin olive oil

1 tsp honey or agave syrup (to add a hint of sweetness)

Salt and pepper to taste

¼ cup grated Parmesan cheese (optional for garnish)
