8 oz whole wheat pasta (fusilli or penne)

1 can (15 oz) chickpeas, rinsed and drained

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (any color), diced

1/2 red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

1/4 cup Kalamata olives, pitted and sliced

1/4 cup extra-virgin olive oil

2 tbsp apple cider vinegar

1 tbsp Dijon mustard

1 tsp garlic powder

Salt and freshly ground black pepper, to taste

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the whole wheat pasta and cook according to the package directions until it reaches an al dente texture. Once cooked, drain the pasta in a colander and rinse under cold running water to halt the cooking process. Place the cooled pasta into a large mixing bowl.

    Prepare the Vegetables: While the pasta is cooking, prep your vegetables. Chop the cherry tomatoes in half, dice the cucumber and bell pepper, and finely chop the red onion. Don’t forget to rinse and drain the chickpeas. Once all the vegetables are ready, add them along with the chickpeas to the bowl containing the pasta.

      Make the Dressing: In a separate small bowl, whisk together the extra-virgin olive oil, apple cider vinegar, Dijon mustard, garlic powder, and a pinch of salt and black pepper. Continue whisking until the mixture is well emulsified and smooth.
