1 cup coconut milk

Zest of 2 limes

1/4 cup fresh lime juice (approximately 2 limes)

2 tablespoons honey or agave syrup

2 cloves garlic, minced

1 teaspoon ground ginger

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional for a spicy kick)

1 cup shredded coconut (preferably unsweetened)

Fresh cilantro, chopped (for garnish)

Skewers (if wooden, soaked in water for at least 30 minutes)

Marinate the Shrimp: In a medium mixing bowl, combine the coconut milk, lime zest, fresh lime juice, honey or agave syrup, minced garlic, ground ginger, salt, black pepper, and red pepper flakes. Whisk thoroughly until the marinade is well blended. Add the peeled and deveined shrimp to this mixture, ensuring each shrimp is fully coated. Cover the bowl with plastic wrap or a lid and refrigerate for a minimum of 30 minutes and up to 1 hour for maximum flavor infusion.

    Prepare the Skewers: Preheat your grill to medium-high heat. If you are using wooden skewers, make sure they have been soaked in water for at least 30 minutes to prevent them from burning while grilling.
