1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

1 cup coconut milk (from a can or carton)

1/4 cup freshly squeezed lime juice (approximately the juice of 2 limes)

Zest of 1 lime

2 tablespoons honey or maple syrup

2 cloves garlic, finely minced

1 teaspoon ground ginger

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/4 teaspoon red pepper flakes (optional, for an extra kick)

Wooden or metal skewers (if using wooden, soak in water for 30 minutes prior)

Marinate the Chicken: In a large mixing bowl, combine the coconut milk, freshly squeezed lime juice, lime zest, honey or maple syrup, minced garlic, ground ginger, salt, black pepper, and red pepper flakes (if you want some heat). Whisk the mixture thoroughly until well-blended. Add the cubed chicken to the bowl, ensuring each piece is fully coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours to deepen the flavors.

    Prepare the Skewers: Preheat your grill to medium-high heat, aiming for a temperature of about 375°F to 400°F. If you're using wooden skewers, make sure they have been soaking in water to prevent burning while cooking.

      Skewer the Chicken: After marinating, remove the chicken pieces from the mixture and thread them onto the skewers. Take care to leave a small space between each piece for even cooking and better char.
