Ingredients

1 lb ground beef (80% lean)

1/2 lb ground pork

1 cup Italian-style breadcrumbs

1/2 cup milk

1 small onion, finely chopped

1 small green bell pepper, finely chopped

1 cup mushrooms, finely chopped

2 cloves garlic, minced

2 large eggs

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

Salt and pepper, to taste

1 cup provolone cheese, shredded

1 teaspoon Italian seasoning

Optional: Additional provolone slices for topping

Instructions

Preheat the Oven: Set your oven to 350°F (175°C). Prepare a loaf pan by greasing it or lining it with parchment paper to ensure easy removal later.

Sauté the Vegetables: Heat a drizzle of olive oil in a skillet over medium heat. Add the finely chopped onion, green bell pepper, and mushrooms. Sauté for about 5-7 minutes until the vegetables are softened. Stir in the minced garlic and cook for an additional minute. Remove the skillet from heat and allow the mixture to cool slightly.

Combine the Ingredients: In a large mixing bowl, combine the ground beef, ground pork, breadcrumbs, milk, and the cooled sautéed vegetables. Crack in the eggs, add the Worcestershire sauce, Dijon mustard, Italian seasoning, and season with salt and pepper to taste. Mix all the ingredients thoroughly, but be careful not to overmix—this keeps the meatloaf tender.

Shape the Meatloaf: Transfer the mixture into the prepared loaf pan. Shape it into a loaf form, making a slight indentation along the center to accommodate the cheese.

Add the Cheese Surprise: If you're using provolone slices, place them into the center of the meatloaf mixture, gently pressing them into the indent. Then, cover the cheese with the remaining meat mixture, sealing it well to hide the cheesy filling.

Bake the Meatloaf: Place the loaf pan in your preheated oven. Bake the meatloaf for approximately 60-70 minutes, or until the internal temperature reaches 160°F (70°C).

Optional Cheese Topping: If you want to elevate the dish, add additional slices of provolone cheese on top of the meatloaf during the last 10 minutes of baking.

Let it Rest: Once baked, take the meatloaf out of the oven and let it rest in the pan for about 10 minutes. This resting period helps the meatloaf retain its juices, ensuring each slice is moist.

Slice and Serve: After resting, slice the meatloaf carefully. Serve it warm, paired with crusty rolls, a side of creamy mashed potatoes, or enjoy it as a filling for hearty sandwiches.
