Ingredients

For the Meatloaf:

1 ½ pounds ground beef (preferably 80% lean for a good balance of flavor and moisture)

1 cup breadcrumbs (plain or seasoned Italian for additional flavor)

1 small onion, finely chopped

2 cloves garlic, minced (add more if you love garlic!)

2 large eggs

1 cup milk (whole milk for creaminess)

3 tablespoons Worcestershire sauce (for a savory depth)

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

½ cup ketchup (for a glossy glaze on top)

2 tablespoons brown sugar (optional, for a hint of sweetness)

For the Mashed Potatoes:

2 pounds russet potatoes, peeled and cut into uniform cubes

½ cup whole milk (or heavy cream for ultra decadence)

4 tablespoons unsalted butter (for richness)

Salt and pepper to taste

Fresh chives or parsley for garnish (optional, for a pop of color)

Instructions

Step 1: Prepare the Meatloaf

Start by preheating your oven to 350°F (175°C).

In a large mixing bowl, combine the ground beef, breadcrumbs, finely chopped onion, minced garlic, eggs, milk, Worcestershire sauce, dried thyme, dried oregano, salt, and black pepper. Gently mix together until everything is just combined—be careful not to overmix, as this could affect the texture.

Shape the meat mixture into a loaf and carefully transfer it to a lightly greased roasting pan.

In a small bowl, blend together the ketchup and brown sugar (if using). Spread this sweet and tangy glaze evenly over the top of the meatloaf to create a delicious crust as it cooks.

Bake in the preheated oven for about 1 hour, or until the internal temperature of the meatloaf reaches 160°F (70°C) to ensure it's fully cooked.

Step 2: Make the Mashed Potatoes

While the meatloaf bakes, prepare the mashed potatoes. Place the peeled and cubed potatoes in a large pot and cover with cold, salted water. Bring to a gentle boil over medium heat.

Once boiling, reduce to a simmer and let the potatoes cook until they're fork-tender, about 15-20 minutes. Drain the potatoes well.

Return the drained potatoes to the pot, and add the butter and milk. Mash until you reach your desired level of creaminess—smooth and luscious is the goal! Season with salt and pepper to taste.

If desired, sprinkle chopped chives or parsley on top for a fresh touch.

                        Step 3: Serving

Once the meatloaf is fully cooked, remove it from the oven and let it rest for about 10 minutes before slicing—this will help maintain its juices.

Serve generous slices of the meatloaf alongside a hearty scoop of creamy mashed potatoes. For extra flavor, drizzle additional ketchup or homemade gravy over the meatloaf.
