Classic Chicken & Sweet Potato Stew

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

2 large sweet potatoes, peeled and cut into 1-inch cubes

1 medium onion, finely chopped

3 cloves garlic, minced

2 medium carrots, sliced

1 red bell pepper, diced

4 cups (950ml) low-sodium chicken broth

1 can (14.5 oz) diced tomatoes, including the juices

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon dried thyme

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

2 tablespoons olive oil

Fresh parsley, chopped, for garnish

Sauté the Chicken: In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the bite-sized chicken pieces and sear for about 5-7 minutes, or until they are golden brown on all sides. Carefully remove the chicken from the pot and set aside on a plate.
