1 pound (450g) beef sirloin, thinly sliced

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 ounces (225g) mushrooms, sliced (button or cremini)

1 cup beef broth (low-sodium recommended)

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

Salt and pepper, to taste

2 cups egg noodles

Fresh parsley, finely chopped (for garnish)

Cook the Noodles:

    Fill a large pot with water, add a generous amount of salt, and bring to a rolling boil. Add the egg noodles and cook according to the package directions until they are al dente. Once cooked, drain the noodles and set them aside in a large bowl.

      Sauté the Beef:

        In a spacious skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the sliced beef sirloin in batches to avoid overcrowding the pan.
