Ingredients

2 ripe bananas, thoroughly mashed

1 cup rolled oats

1/2 cup almond butter (or substitute with peanut butter)

1/4 cup honey or maple syrup

1/2 cup dark chocolate chips

1/4 cup chopped walnuts or pecans (optional for an extra crunch)

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon ground cinnamon (optional for added warmth)

Instructions

Begin by preheating your oven to 350°F (175°C). Prepare an 8-inch square baking pan by lining it with parchment paper, allowing a little overhang on the sides for easy removal of the bars later on.

In a large mixing bowl, blend the mashed bananas, almond butter, honey (or maple syrup), and vanilla extract. Use a fork or a whisk to mix until the ingredients are smooth and fully combined.

In a separate bowl, whisk together the rolled oats, baking powder, salt, and ground cinnamon (if using). Ensure that the dry ingredients are well combined to evenly distribute the baking powder.

Gradually fold the dry ingredient mixture into the wet mixture. Mix gently using a spatula or wooden spoon until they are just combined; avoid over-mixing to keep the texture light.

Carefully incorporate the dark chocolate chips and the optional chopped nuts into the batter, ensuring they are evenly distributed without overworking the mixture.

Transfer the batter into the prepared baking pan. Use a spatula to spread it evenly throughout the pan, creating a smooth top.

Place the pan in the preheated oven and bake for 25-30 minutes. You will know it's done when the edges are golden brown and a toothpick inserted into the center comes out clean.

Once baked, allow the bars to cool in the pan for about 10 minutes. Then, using the edges of the parchment paper, lift the bars out of the pan and transfer them to a wire rack to cool completely.

After they have cooled down, cut the mixture into bars and enjoy your delightful treats! For storage, keep any leftovers in an airtight container at room temperature for up to 5 days, or refrigerate for extended freshness.

                      - Presentation Tips: Consider serving the bars with a sprinkle of extra chocolate chips and nuts on top or a drizzle of honey for an appealing finish. Enjoy as a healthy snack or dessert!
