Ingredients

10 rice paper wrappers

1 cup cooked vermicelli rice noodles

1 cup cooked shrimp, sliced in half lengthwise (or tofu for a vegetarian alternative)

1 cup mixed greens (such as lettuce, spinach, and arugula)

½ cup shredded carrots

½ cup sliced bell peppers (choose red, yellow, or orange for a vibrant look)

½ cup cucumber, julienned

½ cup fresh herbs (mix of mint, cilantro, and basil works beautifully)

1 avocado, sliced

¼ cup dipping sauce (consider peanut sauce or hoisin sauce for a flavorful touch)

Instructions

Prepare the Noodles: Begin by cooking the vermicelli rice noodles according to the package instructions. After cooking, drain them and rinse well under cold water to stop the cooking process. Set the noodles aside to cool completely.

Prepare the Filling Ingredients: If using shrimp, slice each piece in half lengthwise to create thinner pieces. For tofu, cut it similarly. Julienne the cucumber and bell peppers to create long strips. Shred the carrots finely. Slice the avocado into thin wedges and coarsely chop the mixed greens and fresh herbs.

Hydrate the Rice Paper Wrappers: Fill a shallow, wide dish with warm water. Take one rice paper wrapper and gently dip it into the warm water for about 10-15 seconds, or until it softens while remaining slightly firm to the touch. Remember that it will become more pliable as you work. Carefully lay the softened wrapper flat on a clean surface or cutting board.

Layer the Fillings: Position a small handful of the cooked vermicelli noodles in the lower third of the rice paper. Next, add a few pieces of shrimp (or tofu), a handful of mixed greens, followed by some slices of carrot, bell pepper, cucumber, and avocado. Finish by sprinkling a few fresh herbs on top for an aromatic boost.

Roll It Up: Begin to fold the sides of the rice paper over the filling. Then, gently start rolling the wrapper from the bottom upwards, tucking it in as you go to form a tight, secure roll. Repeat this process with the remaining rice paper wrappers and filling ingredients.

Serve and Present: Arrange your beautiful, colorful rice paper rolls on a serving platter. Serve them chilled, alongside a small bowl of your chosen dipping sauce for added flavor.

Enjoy: These fresh and vibrant rice paper rolls are perfect for summer gatherings or as a light, healthy meal option that bursts with flavor and color!

Optional Presentation Tips: For a stunning display, serve the rolls on a wooden platter lined with fresh lettuce leaves, and place your dipping sauce in a small ramekin at the center. You can also garnish the platter with extra herbs or edible flowers for a picturesque touch!
