Ingredients

8 ounces elbow macaroni

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, diced

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups milk (whole or 2%)

8 ounces sharp cheddar cheese, shredded

4 ounces cream cheese, diced

1 cup pickled jalapeños, chopped (adjust based on preferred spice level)

½ cup breadcrumbs (optional, for topping)

Fresh cilantro, chopped (for garnish)

Instructions

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the elbow macaroni and cook according to package instructions until al dente, usually about 7-8 minutes. Drain the pasta and set it aside.

Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken and season with smoked paprika, garlic powder, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is fully cooked through and nicely browned. Transfer the cooked chicken to a plate and set aside.

Make the Cheese Sauce: In the same skillet, melt the butter over medium heat. Once melted, add the flour and whisk continuously for about 1 minute, creating a roux. Gradually pour the milk into the skillet while whisking to prevent lumps from forming. Continue cooking, whisking frequently, until the mixture thickens (about 3-5 minutes).

Incorporate the Cheeses: Lower the heat to low, and add the shredded sharp cheddar and diced cream cheese to the thickened sauce. Stir gently until both cheeses are melted and the sauce is smooth and creamy. Fold in the chopped jalapeños and the cooked chicken, mixing until everything is evenly combined. Adjust the seasoning with more salt and pepper if needed.

Combine Pasta and Sauce: Carefully fold the drained macaroni into the cheese sauce, ensuring all the pasta is well-coated in the creamy mixture.

Prepare for Baking (Optional): If you prefer a baked top, transfer the mac and cheese to a greased baking dish. Evenly sprinkle the breadcrumbs over the top for a crunchy finish.

Bake (Optional): Preheat your oven to 350°F (175°C). Bake the mac and cheese for 20 minutes, or until the top is golden brown and bubbling. If you’d like to skip the baking, you can serve the dish directly from the skillet.

Serve: Garnish with freshly chopped cilantro and additional jalapeños if desired. Dive into your deliciously creamy, spicy chicken mac and cheese!
