Ingredients

4 medium zucchinis, thinly sliced

1 cup grated sharp cheddar cheese

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

1 medium onion, diced

2 cloves garlic, minced

3 large eggs

1/2 cup milk

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1 cup breadcrumbs (preferably whole wheat)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions

Preheat the oven: Set your oven to preheat at 375°F (190°C) so it's ready for baking.

Prepare the zucchini: In a spacious mixing bowl, add the thinly sliced zucchinis and sprinkle with a pinch of salt. Let them sit for approximately 10 minutes; this will help draw out excess moisture. Afterward, use a paper towel to pat the zucchini slices dry, removing any released liquid.

Sauté the aromatics: In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, or until it becomes soft and translucent. Next, incorporate the minced garlic and cook for an additional minute, stirring frequently until fragrant. Once done, remove the skillet from the heat.

Combine wet ingredients: In a separate bowl, whisk together the eggs and milk until smooth. Then mix in the dried oregano, salt, and black pepper, ensuring everything is well-blended.

Mix it all together: In a large mixing bowl, combine the sautéed onion and garlic with the prepared zucchini slices. Pour in the egg mixture and add half of each cheese - cheddar, mozzarella, and Parmesan. Toss everything together thoroughly, ensuring the zucchini is evenly coated with the mixture.

Assemble the casserole: Transfer the zucchini mixture into a greased 9x13 inch casserole dish. Spread it evenly across the dish to ensure uniform baking.

Add the topping: In a small bowl, combine the remaining breadcrumbs with the leftover cheeses (cheddar, mozzarella, and Parmesan). Evenly sprinkle this cheesy breadcrumb mixture over the zucchini layer, creating a delightful crunchy topping.

Bake: Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the casserole is set in the center.

Garnish and serve: After baking, take the casserole out of the oven and allow it to cool for a few minutes. Just before serving, garnish with chopped fresh parsley to add a vibrant touch.
