Ingredients

For the Quesadillas:

4 large flour tortillas

1 cup shredded mozzarella cheese

1 cup shredded cheddar cheese

1 bell pepper (choose red, yellow, or green), diced

1 cup mushrooms, sliced

1 small zucchini, diced

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly cracked pepper to taste

2 tablespoons olive oil

Fresh cilantro, chopped (for garnish, optional)

For the Avocado Dip:

2 ripe avocados

Juice of 1 lime

1 garlic clove, minced

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup Greek yogurt or sour cream (optional for creaminess)

A pinch of cayenne pepper or chili powder (optional for a spicy kick)

Instructions

Prepare the Filling:

    - Begin by heating 2 tablespoons of olive oil in a large skillet over medium heat. Once hot, add the finely chopped onions and minced garlic. Sauté for about 3 minutes, or until the onions become translucent and fragrant.

      - Next, incorporate the diced bell pepper, zucchini, and sliced mushrooms into the skillet. Sprinkle in the ground cumin, smoked paprika, salt, and freshly cracked pepper. Cook the vegetables for 5-7 minutes, stirring occasionally, until they soften and are tender. Once cooked, remove from heat and set the filling aside.

        Make the Quesadillas:

          - Place one tortilla in a large non-stick skillet over medium heat. Evenly distribute half of the shredded mozzarella and half of the shredded cheddar cheese over the surface of the tortilla.

            - Spoon half of the prepared vegetable mixture over the cheese, followed by the remaining cheese. Top with a second tortilla to complete the quesadilla.

              - Cook for 3-4 minutes until the bottom tortilla turns golden brown and the cheese begins to melt. Carefully flip the quesadilla over and cook for another 3-4 minutes until the other side is also golden. Once done, remove the quesadilla from the skillet and keep warm. Repeat this process with the remaining tortillas and filling.

                Prepare the Avocado Dip:

                  - While the quesadillas are cooking, slice the avocados in half, remove the pit, and scoop the flesh into a mixing bowl.

                    - Add the lime juice, minced garlic, salt, black pepper, and the optional Greek yogurt or sour cream for extra creaminess. Use a fork to mash the ingredients together until you achieve a smooth consistency, adjusting the seasoning to taste. If you prefer a spicy touch, add a sprinkle of cayenne or chili powder.

                      Serve:

                        - Cut the warm quesadillas into wedges and arrange them on a serving platter. Garnish with freshly chopped cilantro, if desired. Serve immediately alongside the creamy avocado dip for dipping.
